For anyone who hasn't seen the movie, they did explain it.
His name is Hancock because one time he was injured, hit over the head, and he woke up in the hospital with bad amnesia. So when the nurse told him to give his John Hancock on the hospital release papers, he thought that's what his name was so he wrote it.
The movie never said what his real name was.
